Our approach treats sustainability and commercial performance as the same conversation, not competing priorities.
Captivate is an independent hospitality consultancy. We advise hotels on how to run more responsible, lower-impact food and beverage operations. We do not supply, install or resell equipment, technology or products, and we take no commission from suppliers. Our only interest is what genuinely improves the operation.
Our advice draws on more than 25 years of hotel F&B leadership and on ISO 14001 environmental management thinking. Our founder, Michael Butler, is a trained ISO 14001 Lead Auditor and a Fellow of the Institute of Sustainability and Environmental Professionals, so recommendations are grounded in both operational reality and recognised environmental standards.
Where we focus
- Food waste. Food and general waste are among the largest and most recoverable sources of lost margin and avoidable emissions in hotel F&B. Reducing it is usually the fastest responsible win.
- Procurement and supply. We review sourcing, specification and supplier relationships to cut waste, packaging and transport impact while protecting quality and cost.
- Energy and workflow efficiency. We look at how energy, labour and process combine, and where practical change reduces consumption without reducing service.
- Measurement and KPIs. We define baselines and track results against clear indicators, so sustainability outcomes are evidenced rather than assumed.
ISO 14001 thinking, applied practically
We use the discipline of ISO 14001 (understand the operation, identify the significant impacts, set measurable objectives, then review and improve) without turning it into a paperwork exercise. The aim is durable, commercially sensible change that a hotel team can actually sustain.

Our carbon calculator gives an indicative view of where your operation’s footprint sits today, and which areas contribute most. It is a useful first step before planning any reduction programme.
